I couldn't find a Hardware Monitor or anything similar in the BIOS. Couldn't find a temp display anywhere... The computer will now let me stay in BIOS as long as I want but the moment I exit and try to boot to the hard drive, it crashes.

How old is this computer? Can you boot from a CD? If you can I'd do that and run memtest86 for a while to see if it shuts down. If not then you likely have a problem with the hard drive or windows itself.
If it still shuts down I'd try swapping the power supply to narrow things down a little at least.

The comp isn't old at all. It's a Dell Optiplex GX280. Never had a problem with it before. I tried the hard drive in another computer and it worked fine so I know it's not that... I clicked out the RAM, then put it back in and it worked for about 10 min before going back to it's normal crashing state.

Correction Mr. President, I DID build this, and please give Lurker a hug, we wouldn't want to damage his self-esteem.

Dell overall isn't so bad. The Optiplex is crap though.
Download the diagnostics off Dell's web page, make floppies, and diagnose away. There's also a tool that will try and diagnose blue screen events, but since your system isn't stable enough for that I doubt it would help.
